Heat oil in large skillet (just enough to cover
the bottom). Carefully put potatoes and other veggies if desired in pan
and flatten with a spatula. If raw, cover and cook over low-medium heat
15-20 minutes or until soft. If precooked, cover and cook over medium heat
10-15 minutes or until hot. Flip with spatula and heat on medium- high for
a few minutes or until bottom is golden, flip again and brown other side.
Remove from pan.
Cook sausage in fry pan over medium high heat stirring and breaking
frequently. When fully cooked, add milk and pepper to taste and remove
from heat. Bake biscuits according to package. In small bowl, combine corn
starch and cold water until dissolved while biscuits are baking. Bring
sausage mixture to simmer over medium heat, remove from heat. When bubbles
stop, add corn starch mixture stirring constantly. Split biscuits on plate
and scoop gravy over and serve.
Meal suggestions: Serve with eggs cooked any way (I like over medium)
and home fries or hash browns. Include a large glass of juice to round off
the meal.
Mix gravy, turkey, stuffing and water in a large pot and heat slowly over
medium-low heat stirring frequently until hot throughout. If using leftover
mashed potatoes, heat in microwave. Scoop turkey gravy mixture over potatoes on
dinner plates and serve. Mmmm!
3 cups cooked white rice, Alternately you can use
Cooked Pasta
2 cups cooked, chopped chicken or Turkey
1 (10 ounce) package frozen broccoli, thawed
1 cup shredded Cheddar cheese
1 (7 ounce) package whole wheat crackers, crushed
3 tablespoons butter, melted
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan bring 2 cups water to a boil. Add rice and stir.
Reduce heat, cover and simmer for 20 minutes.
In a 9x13 inch baking dish combine chicken, broccoli, cheese and
cooked rice.
In a small bowl combine crushed crackers and melted butter. Spread
over rice mixture.
Bake in preheated oven for 20 to 30 minutes, or until crackers are
crispy.
Melt 3 Tbs margarine in large skillet and add the meat and
onions. Cook on medium high heat until meat is browned on all
sides then remove to and set aside. Add remaining 3 Tbs margarine
in skillet. Melt, add mushrooms, stir, cover and cook 3 minutes.
Season with salt and pepper then stir in sour cream then gravy (do
not allow to boil). Return the beef and onion and just heat
through. Serve over egg noodles.
1Lb Cooked Chicken, Beef, Pork, or Shrimp (Optional) **
Wok Oil for Cooking
First, put first 4 ingredients in a
microwave rice cooker or microwave pressure cooker. Seal
lid and microwave on high 20 minutes. Let stand 5
minutes more. (Or read directions on cookers)
Scramble 2 eggs in a bowl while
heating oil and 1 tsp soy sauce in a large deep skillet or wok
over medium high heat. Pour egg into hot pan, then 1/2 veggies,
1/2 meat (optional) and finally 1/2 rice. Stir using spatula
until egg is all cooked and no longer runny. Remove to a Large
serving bowl and repeat to finish the other half. Serve hot as a
stand alone meal or a side dish.
* Veggies can be changed to include those you like and
exclude those you don't. Suggestions are Peas, Onions, Broccoli,
Water Chestnuts, Bamboo Shoots, Baby Corn, Green Peppers, etc.
**Cooked chicken, cooked pork or cooked beef may be added to
complete this dish as a meal.
Combine meat, egg, bread crumbs and
seasonings. Mix well and form 1 1/2 inch balls. Brown balls
lightly on all sides in a well oiled deep skillet over medium
high heat. Drain fat, add sauce and simmer 25 minutes or until
done. Scoop meatballs into rolls and sprinkle with cheese.

the cheater's
way, all packaged, or the home made
style, which takes longer but tastes better as you can adjust the recipe
to your liking.
Cheaters:
Homemade:
1 Head Iceberg Lettuce, broken up for a salad
1 Carrot, shredded
3/4 Lb Hamburger
1/2 Lb Italian Sausage
Chili Seasoning, Onion Powder, Garlic
Powder, Black Pepper to taste

1 Can of Chili, heated (A good kind)

Cheaters:
Place salad mix on each plate to be served. Spread a
handful of corn chips over salad. Now add a generous scoop of
heated chili and top with some cheese to taste. Serve with sour

Homemade:
Cook hamburger and sausage using seasonings to taste. Add
kidney beans and heat thoroughly, remove from heat. Toss carrots
and tomatoes in lettuce in large bowl. Place salad mix on each
plate to be served. Spread a handful of corn chips over salad.
Now add a generous scoop of heated chili and top with some
cheese to taste. Serve with sour cream.
Pepperoni, Mushrooms, Olives, Any pizza topping you desire
(Optional)
Mix hot cooked spaghetti with beaten eggs, butter and Parmesan cheese. Press into buttered 10 inch pie
pan. In large skillet cook meat, onion, green pepper, tomato and seasonings. Drain.
Stir in spaghetti sauce. Spread one (15 ounce) carton of Ricotta or cottage cheese over
spaghetti, then meat/sauce filing. Bake 20 minutes at 350 degrees. Then add Mozzarella
cheese and any pizza toppings you desire. Bake until cheese is melted, about 5
minutes. Let stand 5 minutes before cutting.
Cook hamburger and taco seasoning according to
seasoning pack. Slice cream cheese and arrange evenly in oblong baking
dish, spread cooked meat evenly over cream cheese. Now spread tomatoes
and olives on. Pour taco sauce over the top, and finally, spread cheddar
cheese over the top. Place in a 375° oven and bake until cheese is
melted (about 20-30 minutes). Serve warm.
2 Tbs vegetable oil, olive oil, melted butter or margarine

Cleaning Pumpkin
Seeds. Scoop out seeds from pumpkin. Place in colander under
cold running water, remove the seeds from the pulp and strings. Pat dry
with a clean kitchen towel.
Roasting Pumpkin Seeds. Toss
pumpkin seeds in a bowl with the melted butter or oil and seasonings of
your choice until well coated. Spread evenly on a cookie sheet. Bake in
300° oven until golden, about 20-45 minutes, stirring occasionally. Let
cool on paper towels.
Place eggs in large pot with
cold water. Put on stove and cook on high to boiling. Boil for 10
Minutes. Remove and drain. Shake eggs in hot pot to break shells.
Rinse with cold water and let cool enough to handle. Peel eggs. Cut
all eggs in half lengthwise. Remove the yolks and put in a separate
bowl. Smash yolks. add the mayonnaise and mustard and mix well. Scoop
yolk mixture back into the egg whites. Sprinkle with paprika and
refrigerate until ready to serve.
Cut baked potatoes in half and Scoop
out potato insides into a mixing bowl. Add any and all
ingredients you like and mix and mash. Now fill skins with
potato mix and place on buttered cookie sheet. Top with shredded
cheese if desired and bake at 350° 20 minutes or until hot.

2 Stalks Celery, chopped or sliced

Stir together flour & cold water
until smooth, set aside. In large stock pot heat oil over medium
high heat then add beef and quickly brown on all sides. Carefully
add water, onion, celery, salt and pepper. Bring to a boil then
cover and reduce to a very slow simmer for 1 1/2-2 hours or until
meat is tender. Slowly add flour mixture stirring constantly. Now
add carrots and potatoes and continue to slow simmer covered,
stirring occasionally until potatoes and carrots are soft
(done).
Dumplings:
I usually double the recipe on the Bisquick Box
Dumpling Batter: Bisquick or another
brand baking mix and water or milk for dumpling batter.
Prepare according to directions.
*Homemade: 1 Cup flour, 2 Tsp baking powder, 3/4
Tsp Salt, 1 Egg well beaten, 2 Tbs Melted butter or
margarine, 1/3 cup milk. Mix flour, baking powder and salt
in large mixing bowl. In separate bowl, lightly beat egg,
melted butter and milk together. Stir into flour mix to
make a stiff batter.
Omit flour mixture from stew recipe.
Drop dumplings in boiling stew by rounded teaspoons. Reduce heat
to slow simmer, cover and cook 20 minutes, (or as directed on
dumpling package).

forms around fork. Turn dough onto lightly floured surface
and need 14 times. Pat or roll 1/2 inch thick or slightly
thinner.

1/2 Chicken, bone-in and skin on *, or Turkey carcass
& Bones with Leftover Turkey white & dark meat
3-5 Celery stalks, chopped
5 cloves garlic peeled and chopped (or minced)
1 onion peeled (either whole or chopped)
4 chicken bullion cubes or its equivalent
Salt, pepper, sage, parsley to taste
2 carrots, sliced or 4 ounces frozen or small can
4 ounces fresh or frozen peas or small can
2 1/2 Lbs potatoes, cubed
4 Tbs Cornstarch
8 Tbs Cold Water
Place bones and meat in very large pot
and fill with water. Add turkey meat, celery, garlic, onion,
bullion and some salt. Cook on high until boil, reduce to low and
slow simmer for 2-3 hours refilling water as needed. Add potatoes,
carrots and peas if they are fresh or frozen. Leaving pot on slow
simmer, carefully take turkey carcass and bones out and pick meat
off. Return meat to pot. Taste broth to see if more salt is needed
and add it to desired taste. (if using canned veggies, put in
now). Slow simmer until veggies are done. Remove from heat. Mix
cornstarch and cold water until well blended and stir into pot
slowly to thicken. Let cool a little before serving.
* 1 breast, 1 wing, 1 drum, and 1 thigh. Alternately,
you can use 2 breasts and wings or, 2 drums and thighs. This must
be bone in and skin on.

1 Large Can Stewed Tomatoes or tomato sauce or 2 14 oz cans
(Optional)
1 Large can Dark Red Kidney Beans or 2 small cans
Chili Seasoning package or 2 Tbs Chili Seasoning
Shredded Cheddar Cheese for topping (Optional)
In large deep skillet, brown meat with garlic and pepper. Add
tomatoes/sauce, kidney beans and seasoning. Cook on medium heat
until hot. Serve with a little cheese topping.
Cheeseburger Mac:
Brown hamburger in skillet at the same time, cook the macaroni and
cheese according to package directions adding the frozen broccoli
to the boiling water just after you add the macaroni. Use 1/4 -
1/2 more milk than the package directions calls for. Mix the
cooked ground beef with the completed Mac & cheese and serve.
Cheesy Mac Dogs:
Cook hotdogs your favorite way or simply add to the
boiling water after adding the macaroni. Cook macaroni and
cheese according to package directions adding the frozen
broccoli to the boiling water just after you add the
macaroni. Use 1/4 - 1/2 more milk than the package
directions calls for. Mix the cooked sliced hotdogs with
completed Mac & cheese and serve.
1 Lb Hamburger, sausage or both, browned (Optional)
1/2 Onion, Chopped and sautéed (Optional)
1/2 Green Pepper, Chopped and sautéed (Optional)
1 Clove Garlic, Chopped and sautéed (Optional)
1 Lb box Macaroni Cooked & drained
1 Jar Spaghetti Sauce
1 Cup Parmesan Cheese
Mix macaroni, onion, hamburger, sauce and 3/4 cup parmesan
cheese and put in baking dish. Sprinkle the rest of the parmesan
cheese on top and bake in 400° oven 30 minutes or until done.
This makes a great "leftover" meal! In
oblong baking dish, layer hamburger, then gravy, then veggies and finally
mash potatoes on top. Bake in a 400° Oven 20 minutes or until hot.

over medium high heat. Add 1/2 cup water and simmer 20 minutes

steak in rolls with veggies and top with sauce and cheese. Can
be placed in a 400° oven to melt the cheese.

mustard and mix well. Spread on bread with lettuce and/or tomato
if desired to make sandwich.

A few Dashes Black Pepper for taste
Mayonnaise, 1-2 cups, Depending on preference
A few Leaves of Lettuce
1 Tomato, Sliced
Slices of your Favorite Bread or sandwich rolls
Combine meat, celery, onion, pepper and
mayonnaise and stir until well blended. Place a leaf or
two of lettuce and a slice or two of tomatoes on bread
and spread desired amount of chicken salad. Top with
other half of bread and enjoy!
In large bowl combine lettuce, carrot,
tomato and eggs, toss well. In Separate bowl, combine
remaining ingredients and stir until well blended.
Refrigerate until ready to serve. Serve a scoop of ham
mix over individual salads.
Butter 1 side each bread and grill in hot
skillet skillet (Optional). Put hot cooked bacon on top and then cheese.
Spread mayonnaise on bread, add lettuce, warm bacon , cheese then tomato
slices.
1 1/2 Lbs Boneless, Skinless Chicken Breast (or Tenderloins)
Batter or Breading Mix
Oil for Frying
1 Jar or Can Spaghetti Sauce
1 Tomato, sliced thin (Optional)
Lb Shredded Mozzarella Cheese
Parmesan Cheese
Italian Bread or Sub Rolls
Carefully pound chicken breasts with mallet. Cut if very large pieces.
(Tenderloins do not need to be pounded) Rinse in cold water. Dip chicken in
breading or batter and let sit in single layer on plate for a few minutes. Place
chicken pieces, 1 or 2 at a time, in hot oil and cook until chicken floats in
oil indicating doneness.
Place chicken on bread or in split roll, add sauce, mozzarella and parmesan.
Place in foil on a baking sheet and cook in a 400° oven for 10 minutes or until
hot throughout and cheese is bubbly.
2-3 Chicken Tenderloins or 1 Small Breast, pounded
3 Strips Bacon Cooked
1 Slice Cheese, your favorite (Optional)
2 Slices Favorite Bread (I use Sourdough)
Margarine (Optional)
Mayonnaise
1 or 2 Leaves Lettuce
2 Tomato Slices
Cook chicken: Either grilled in a hot
skillet over medium-high heat until done, or fry according to fried
fingers method. Put hot cooked bacon on top and then cheese. Butter
1 side each bread and grill in hot skillet skillet. (Optional) Spread
mayonnaise on 1 slice bread, add lettuce, then tomato slices. Put warm
chicken with bacon and cheese on tomatoes and close sandwich. Mmmmmmmmm!
