Combine meat, egg, bread crumbs and
seasonings. Mix well and form 1 1/2 inch balls. Brown balls
lightly on all sides in a well oiled deep skillet over medium
high heat. Drain fat, add sauce and simmer 25 minutes or until
done. Scoop meatballs into rolls and sprinkle with cheese.

style, which takes longer but tastes better as you can adjust the recipe
to your liking.

Cheaters:
Place salad mix on each plate to be served. Spread a
handful of corn chips over salad. Now add a generous scoop of
heated chili and top with some cheese to taste. Serve with sour
cream.
Homemade:
Cook hamburger and sausage using seasonings to taste. Add
kidney beans and heat thoroughly, remove from heat. Toss carrots
and tomatoes in lettuce in large bowl. Place salad mix on each
plate to be served. Spread a handful of corn chips over salad.
Now add a generous scoop of heated chili and top with some
cheese to taste. Serve with sour cream.
Cook hamburger and taco seasoning
according to seasoning pack. Slice cream cheese and arrange
evenly in oblong baking dish, spread cooked meat evenly over
cream cheese. Now spread tomatoes and olives on. Pour taco sauce
over the top, and finally, spread cheddar cheese over the top.
Place in a 375° oven and bake until cheese is melted (about
20-30 minutes). Serve warm.
Pepperoni, Mushrooms, Olives, Any pizza topping you desire
(Optional)
Mix hot cooked spaghetti with beaten eggs, butter and Parmesan cheese. Press into buttered 10 inch pie
pan. In large skillet cook meat, onion, green pepper, tomato and seasonings. Drain.
Stir in spaghetti sauce. Spread one (15 ounce) carton of Ricotta or cottage cheese over
spaghetti, then meat/sauce filing. Bake 20 minutes at 350 degrees. Then add Mozzarella
cheese and any pizza toppings you desire. Bake until cheese is melted, about 5
minutes. Let stand 5 minutes before cutting.

2 Lbs Hamburger or Meatloaf Mix
1 egg

Ketchup Variation: Combine everything but 1 Tbs ketchup and mix
well with your clean hands. Pat into loaf pan, spread remaining ketchup on
top and cook in a 350° oven for 45 minutes or until done.
Stuffing Variation: Combine everything and mix well with your
clean hands. Pat into loaf pan and cook in a 350° oven for 45 minutes or
until done.
Whole Loaf: Pat into loaf pan and cook in a 350° oven for 45
minutes or until done.
Individual Sizes: Pat into muffin pan and cook in a 400° oven
for 25 minutes or until done.
This makes a great "leftover" meal! In
oblong baking dish, layer hamburger, then gravy, then veggies and finally
mash potatoes on top. Bake in a 400° Oven 20 minutes or until hot.

1 lb ground beef, 1 lb chicken
sliced thin, or 1 cup shredded colby,
cheddar and monterey jack cheeses
1 - 2 Cans refried beans
1 tablespoon minced garlic (Optional)
Onion powder or 1/2 cup chopped onions
(Optional)
Salt and Pepper
One 4 1/2 ounce can chopped green
chilies (Optional)
Two 10 ounce cans enchilada sauce
Corn tortillas
2 cups shredded Colby, cheddar
and Monterey jack cheeses
If not using meat, heat 2 cans refried
beans then stir in 1 cup shredded cheese and 2 Tbs enchilada
sauce. If using meat, cook meat with onions or
powder, garlic, salt, pepper and the green chilies until
meat is no longer pink, drain off fat and add 1 can
refried beans and heat thoroughly. Add just enough
enchilada sauce to bind mixture together. Heat corn
tortillas either by dipping one at a time into simmering
water to soften (only takes a minute or two), or place 4
at a time between wet paper towels and microwave 40
seconds on high. You may either dip the tortillas in the
sauce or not (I prefer dipping since its the sauce that
makes the dish). Place 1 TBS of the mixture off center
on the tortilla. Roll tortilla firmly in greased baking
pan. Continue
until all the mixture is gone. Pour
remaining enchilada sauce over the rolled enchiladas making sure
to cover the entire pan. Bake for 10 minutes at 400 degrees;
then add the Cheeses and bake 10 minutes more for a total of 20
minutes. Serve with chips or salad.
If not using meat, heat refried beans, mix in some shredded
cheese and stir in seasoning packet. In large skillet, brown
hamburger and follow directions on seasoning pack. Now add
refried beans and continue to cook until heated through. Heat
tortillas by placing 4 at a time between wet paper towels and
microwave 40 seconds on high. Fill, roll and enjoy!

1 Packet Taco Seasoning
10-12 Soft or Hard Taco Shells
1/2 Head Lettuce, shredded (Optional)

the meat. Stir in refried beans and heat through. If using meat,
in large skillet, brown meat and follow directions on seasoning
pack. If using hard shells, dip each in very warm water, lay on
cookie sheet and heat in 350° oven for 10 minutes. If using
soft shells, place 4 at a time between wet paper towels and
microwave 40 seconds on high. Fill and enjoy!

1Lb Spaghetti, Cooked & drained
1 Jar Favorite Sauce
1 Lb Ground Beef or meatball mix
1/2 Cup Italian Style Bread Crumbs

2 Tsp Garlic powder (or Minced Garlic)
1 Tsp Onion Powder (or Minced Onion)
1 Tbs Basil
2 Tbs Italian Seasoning
1/2 Tsp Ground Black Pepper

1 Lb box Macaroni Cooked & drained
1 Jar Spaghetti Sauce
1 Cup Parmesan Cheese
Mix macaroni, onion, hamburger, sauce and 3/4 cup parmesan
cheese and put in baking dish. Sprinkle the rest of the parmesan
cheese on top and bake in 400° oven 30 minutes or until done.
First, mix well, half the mozzarella with the ricotta, egg and
parsley. Refrigerate until needed. In large skillet, brown and
ground the meat together and drain. In oblong baking dish layer in
this order, Noodles, ricotta mix, meat and sauce. Repeat until you
run out or the pan is full. Sprinkle the other half mozzarella on
top and bake in 400° oven for 30 minutes or until cheese is
bubbly and lasagna is hot throughout.
Mix well ziti, meat, most of sauce,
1/4 Lb Mozzarella and parmesan cheeses. Spread in oblong baking
dish. Pour the rest of the sauce overtop and sprinkle the rest
of the mozzarella. Bake in a 375° oven 30 minutes or until hot.
Cheeseburger Mac:
Brown hamburger in skillet at the same time, cook the macaroni and
cheese according to package directions adding the frozen broccoli
to the boiling water just after you add the macaroni. Use 1/4 -
1/2 more milk than the package directions calls for. Mix the
cooked ground beef with the completed Mac & cheese and serve.
Cheesy Mac Dogs:
Cook hotdogs your favorite way or simply add to the
boiling water after adding the macaroni. Cook macaroni and
cheese according to package directions adding the frozen
broccoli to the boiling water just after you add the
macaroni. Use 1/4 - 1/2 more milk than the package
directions calls for. Mix the cooked sliced hotdogs with
completed Mac & cheese and serve.
Mix rice, hamburger, eggs, seasonings
and 1/2 cup spaghetti sauce. Fill cabbage Leaves with mix and.
Fold left and right sides over and roll from bottom to top (top is
where the leaf was separated from the core). Place in an oblong
baking dish. Pour Sauce over top then spread on Mozzarella cheese.
Top with parmesan cheese. Place in 350° oven and bake 45 minutes
or until done. Sprinkle a little more parmesan on top and serve.
Mix hamburger with rice, 1/2 cup water, chopped onion, salt and
pepper. Shape porcupine hamburger mixture into 1 1/2-inch balls.
In the Oven: Place the porcupine meatballs in an oblong
baking dish. Mix the remaining ingredients in separate bowl
or pot, and pour over the porcupine meatballs. Cover and bake in
350° oven for about 45 minutes. Uncover and bake 15 to 20 minutes
longer.
On the Stove: Heat 1 tablespoon vegetable oil in a large
skillet and cook the meatballs over medium heat until brown; drain
off excess grease. Mix the remaining ingredients in separate
bowl, pour over porcupine meatballs and heat to boiling.
Reduce the heat, cover and simmer for to 45-60 minutes.

and 1/2 cup spaghetti sauce. Fill peppers with mix and place in an
oblong baking dish. Pour Sauce over top then spread on Mozzarella
cheese. Top with parmesan cheese. Place in 350° oven and bake 1
hour or until done. Sprinkle a little more parmesan on top and
serve with garlic toast.
thyme, oregano, rosemary, basil, sage, garlic
powder, ground black pepper, to taste
Cut a 1/2-inch slice from the top of each
tomato; discard tops. Scoop out pulp; squeeze juice out. Season
insides of tomatoes with salt and pepper, turn upside down on paper
towels and set aside. In a medium skillet cook garlic,
vegetables and any meat, if desired, in margarine for 2-5 minutes
or until slightly tender and meat is fully cooked.
Chop pulp and mix all ingredients. Spoon mixture into tomatoes
packing them tightly. Sprinkle cheese or other topping if desired.
Arrange stuffed tomatoes in a baking dish with a little water in the
bottom and bake covered or uncovered at 350° for 20-35 minutes or
until until tomatoes are cooked and tender and stuffing is hot.
1 Large Can Stewed Tomatoes or tomato sauce or 2 14 oz cans

1 Large can Dark Red Kidney Beans or 2 small cans
Chili Seasoning package or 2 Tbs Chili Seasoning

In large deep skillet, brown meat with garlic and pepper. Add
tomatoes/sauce, kidney beans and seasoning. Cook on medium heat
until hot. Serve with a little cheese topping.

6-8 Stewed Beefsteak Tomatoes, Peeled or 2 cans stewed
tomatoes
1 Large can Dark Red Kidney Beans or 2 small cans

1 White Onion, Chopped
3-5 Cloves Garlic, peeled and sliced
1 Tbs Crushed Red Pepper
1 Red Bell Pepper Chopped

Real simple...Stew the tomatoes in a large stock pot until
they're mushy. Cook the meat until it's done, drain and throw into
the stock pot with the stewed tomatoes. Finally, combine all
ingredients except cheese into the stock pot and slow-simmer for a
3-4 hours or until you can't hold back...Have at it!
