Seafood Salad

Seafood Salad
  • 2 cups chopped crab, lobster, shrimp, or any other shell fish (imitation can be used)
  • 1 stalk chopped celery, optional
  • 2-4 chopped  green onion, optional
  • 1/4-1/2 cup mayonnaise
  • 1 tsp lemon juice, optional
  • 1/4 tsp dry mustard, optional
  • salt to taste, optional
  • cayenne pepper to taste, optional
In medium bowl, combine all ingredients. Toss gently to coat and mix well. Cover and refrigerate until serving time.
 

Meatball Sub

  • Italian or other Rolls
  • 1 Lb Ground Meat
  • 1/2 Cup Italian Style Bread Crumbs
  • 1 Egg, lightly beaten
  • 2 Tsp Garlic powder (or Minced Garlic)
  • 1 Tsp Onion Powder (or Minced Onion)
  • 1 Tbs Basil
  • 2 Tbs Italian Seasoning
  • 1/2 Tsp Ground Black Pepper
  • Grated Parmesan Cheese
Combine meat, egg, bread crumbs and seasonings. Mix well and form 1 1/2 inch balls. Brown balls lightly on all sides in a well oiled deep skillet over medium high heat. Drain fat, add sauce and simmer 25 minutes or until done. Scoop meatballs into rolls and sprinkle with cheese.

Sausage Sub

  • Rope Sausage
  • Italian or other rolls
  • Green Peppers, sliced (Optional)
  • Onions, sliced (Optional)
  • Mushrooms, sliced (Optional)
  • Favorite Spaghetti Sauce (Optional)
  • Shredded Mozzarella Cheese (Optional)
Cut sausage in lengths fitting the rolls. Brown sausage on all sides in a well oiled deep skillet over medium high heat. Add 1/2 cup water and simmer 20 minutes turning occasionally. Drain most of the fat & liquid, add peppers, onions and mushrooms and sauté until done. If using sauce, heat in a saucepan. Put sausage in rolls with veggies and top with cheese. Can be placed in a 400° oven to melt the cheese.

Steak Sub

  • Thinly sliced steak
  • Italian or other rolls
  • Garlic powder (Optional)
  • Pepper (Optional)
  • Green Peppers, sliced (Optional
  • Onions, sliced (Optional)
  • Mushrooms, sliced (Optional)
  • Favorite Spaghetti Sauce (Optional)
  • Shredded Mozzarella Cheese (Optional)
Brown steak slightly on all sides in a well oiled deep skillet over medium high heat. Drain most of the fat & liquid, add peppers, onions and mushrooms and sauté until done. If using sauce, heat in a saucepan or microwave. Put steak in rolls with veggies and top with sauce and cheese. Can be placed in a 400° oven to melt the cheese.

Steak-Um's

  • Steak um’s
  • Garlic powder (Optional)
  • Pepper (Optional)
  • Italian or other rolls
  • Green Peppers, sliced (Optional)
  • Onions, sliced (Optional)
  • Mushrooms, sliced (Optional)
  • Shredded Mozzarella Cheese (Optional)
Heat steak and veggies in a well oiled deep skillet over medium high heat, sauté until done. Sprinkle cheese over meat and veggie mixture, put lid on to melt the cheese. Put steak in rolls with veggies and cheese.

Burgers

  • 1 Quarter Pound Burger
  • 1 Sandwich or Burger Roll, warmed or grilled
  • Mayonnaise (Optional)
  • Catsup (Optional)
  • 1 or 2 Leaves Lettuce (Optional)
  • 2 Tomato Slices (Optional)
  • 1 Onion Sliced or chopped (Optional)
  • 2-4 Dill Pickle Slices (Optional)
Cook burger. Spread mayonnaise on top bun, add lettuce, then tomato slices. Put burger on bottom then add onion, pickles and catsup.

Chili Burger

Chili burger

Add heated canned or homemade chili with or without beans. When burger is done, top with warm chili and other optional ingredients.

 

Cheeseburger

Add 1-2 slices of cheese. When burger is done, lay slice cheese on top.

Bacon Cheeseburger

Add 1-3 strips cooked bacon. When burger is done, lay slice cheese then warm bacon on top.

Tuna Melt

  • 1 can Chunk Light Tuna in water
  • 1/4 Onion, Chopped finely (Optional)
  • Mayonnaise, 2-4 Tbs Depending on preference
  • Cheese slices (I prefer American)
  • Tomato Slices (Optional)
  • Slices of your Favorite Bread
  • Butter or margarine
Combine tuna, onion, and mayonnaise and stir until well blended. Butter 1 side of each bread slice. On unbuttered side, spread desired amount of tuna and lay slice of cheese and slice of tomato on top. Close sandwich and cook in hot skillet for 2-3 minutes or until just golden on bottom, turn over and heat 1-2 minutes more or until bottom just turns golden. Remove and serve.

Grilled Sandwiches

Butter 1 side of each bread slice. On unbuttered side, lay 1 or 2 slices of cheese. Close sandwich and cook in hot skillet for 2-3 minutes or until just golden on bottom, turn over and heat 1-2 minutes more or until bottom just turns golden. Remove and serve.

  • Ham Slices (Optional)
  • Slices of your Favorite Bread
  • Butter or margarine

Egg/Egg & Olive Salad

  • 2 Eggs
  • 1 Tbs Mayonnaise
  • Small Squirt Mustard
  • Several Green Olives cut in half (Optional)
  • Small Squirt Mustard
  • Bread Slices
  • Tomato Slices (Optional)
  • Lettuce (Optional)
Place eggs in large pot with cold water. Put on stove and cook on high to boiling. Boil for 10 Minutes. Remove and drain. Shake eggs in hot pot to break shells. Rinse with cold water and let cool enough to handle. Peel eggs. Chop eggs finely, add the olives, mayonnaise and mustard and mix well. Spread on bread with lettuce and/or tomato if desired to make sandwich.

Chicken/Turkey/Tuna Salad

  • 1 Lb Cooked Chicken or Turkey Breast, Chopped or cubed small, or 1 can Light Tuna in water
  • 1 Stalk Celery, Chopped finely
  • 1/2 Onion, Chopped finely
  • A few Dashes Black Pepper for taste
  • Mayonnaise, 1-2 cups, Depending on preference
  • A few Leaves of Lettuce
  • 1 Tomato, Sliced
  • Slices of your Favorite Bread or sandwich rolls
Combine meat, celery, onion, pepper and mayonnaise and stir until well blended. Place a leaf or two of lettuce and a slice or two of tomatoes on bread and spread desired amount of chicken salad. Top with other half of bread and enjoy!

Ham Salad

  • 1 Lb Cooked Ham, Chopped or cubed small
  • 1/4 - 1/2 cup relish or chopped sweet pickles
  • A few Dashes Black Pepper for taste
  • Mayonnaise, 1-2 cups, Depending on preference
  • A few Leaves of Lettuce
  • 1 Tomato, Sliced
  • Slices of your Favorite Bread or sandwich rolls
In large bowl combine lettuce, carrot, tomato and eggs, toss well. In Separate bowl, combine remaining ingredients and stir until well blended. Refrigerate until ready to serve. Serve a scoop of ham mix over individual salads.

BLT  Sandwich

  • 3 Strips Bacon Cooked
  • 1 Slice Cheese, your favorite (Optional)
  • 2 Slices Favorite Bread (I use Sourdough)
  • Margarine (Optional)
  • Mayonnaise
  • 1 or 2 Leaves Lettuce
  • 2 Tomato Slices
Butter 1 side each bread and grill in hot skillet skillet (Optional). Put hot cooked bacon on top and then cheese. Spread mayonnaise on bread, add lettuce, warm bacon , cheese then tomato slices. 

Chicken BLT  Sandwich

  • 2-3 Chicken Tenderloins or 1 Small Breast, pounded
  • 3 Strips Bacon Cooked
  • 1 Slice Cheese, your favorite (Optional)
  • 2 Slices Favorite Bread (I use Sourdough)
  • Margarine (Optional)
  • Mayonnaise
  • 1 or 2 Leaves Lettuce
  • 2 Tomato Slices
Cook chicken: Either grilled in a hot skillet over medium-high heat until done, or fry according to fried fingers method. Put hot cooked bacon on top and then cheese. Butter 1 side each bread and grill in hot skillet skillet. (Optional) Spread mayonnaise on 1 slice bread, add lettuce, then tomato slices. Put warm chicken with bacon and cheese on tomatoes and close sandwich. Mmmmmmmmm!

Chicken/Eggplant Parmesan Sandwich

  • 1 1/2 Lbs Boneless, Skinless Chicken Breast (or Tenderloins)
  • Batter or Breading Mix
  • Oil for Frying
  • 1 Jar or Can Spaghetti Sauce
  • 1 Tomato, sliced thin (Optional)
  • Lb Shredded Mozzarella Cheese
  • Parmesan Cheese
  • Italian Bread or Sub Rolls

Carefully pound chicken breasts with mallet. Cut if very large pieces. (Tenderloins do not need to be pounded) Rinse in cold water. Dip chicken in breading or batter and let sit in single layer on plate for a few minutes. Place chicken pieces, 1 or 2 at a time, in hot oil and cook until chicken floats in oil indicating doneness. 

Place chicken on bread or in split roll, add sauce, mozzarella and parmesan. Place in foil on a baking sheet and cook in a 400° oven for 10 minutes or until hot throughout and cheese is bubbly.

Cold Turkey Sandwiches

  • Left over Turkey
  • Cheese slices from Deli (Optional)
  • Mayonnaise (Optional)
  • 1 or 2 Leaves Lettuce (Optional)
  • 1 or 2 slices tomatoes (Optional)
  • Slices bread
Spread mayo on bread slices, lay lettuce & tomatoes on 1 slice and turkey and cheese on other slice. Close sandwich.

Egg Sandwich

  • 2 Eggs
  • Salt & Pepper to taste
  • 1 Slice Swiss Cheese, Or your favorite
  • 2 Slices Favorite Bread (I use Sourdough)
  • Margarine
  • Mayonnaise
  • 1 or 2 Leaves Lettuce (Optional)
  • 2 Tomato Slices (Optional)
Cook eggs the way you like (I make mine over medium-well). Put cheese on eggs while still hot. Butter 1 side each bread and grill in hot skillet skillet. Remove and spread mayonnaise on 1 slice bread, add lettuce, then tomato slices. Put warm eggs with cheese on tomatoes and close sandwich. Mmmmmmmmm!

Lunchmeat Sandwiches

  • Cold Cuts from the Deli
  • Cheese slices from Deli (Optional)
  • Mayonnaise (Optional)
  • Mustard (Optional)
  • 1 or 2 Leaves Lettuce (Optional)
  • 1 or 2 slices tomatoes (Optional)
  • Slices bread

Peanut Butter & Jelly

  • Peanut Butter
  • Jelly
  • Bread Slices
Spread peanut butter on 1 slice of bread and jelly on another slice and close to make sandwich. Chicken noodle soup goes great with peanut butter and jelly sandwiches!

Tomato Sandwich

  • 2 - 4 Tomato Slices
  • 2 Slices Favorite Bread (I use Sourdough)
  • Salt & Pepper to taste (Optional)
  • Mayonnaise
  • 1 or 2 Leaves Lettuce (Optional)
Spread mayonnaise on bread slices, add lettuce, then tomato slices. Salt and pepper to taste if desired.
