Julianne/Chef  Salad

  • Head Lettuce, torn for salad
  • 1 Meaty tomato, cut into wedges (Optional)
  • 1 Cucumbers, Sliced (Peeled if desired) (Optional)
  • 1 Green pepper, sliced (Optional)
  • 1 Onion, sliced (Optional)
  • Garbanzo Beans (Optional)
  • 3 Eggs, Boiled and wedged (Optional)
  • Black Olives (Optional)
  • American Cheese, sliced thick and cubed (Optional)
  • Swiss Cheese, sliced thick and cubed (Optional)
  • Turkey, sliced thick and cubed (Optional)
  • Ham, sliced thick and cubed (Optional)
  • Salad Dressing

Toss lettuce and everything but dressing together. Refrigerate until ready to serve.

Eggplant/Veal/Chicken Parmesan

  • 1 1/2 Lbs Boneless Veal (Steak), Boneless, Skinless Chicken Breast (or Tenderloins), or *Italian Breaded Veal or chicken patties
  • Batter or Breading Mix (If using veal steak or boneless chicken)
  • Oil for Frying (If using veal steak or boneless chicken)
  • 1 Lb Rotini, cooked and drained
  • 1 Tomato, sliced thin
  • 1 Jar or Can Spaghetti Sauce mixed with 3/4 Cup Water
  • 1/2 Lb Shredded Mozzarella Cheese
  • Parmesan Cheese

* If using Italian breaded veal patties, simply thaw.

Carefully pound meat with mallet. Cut if very large pieces. Rinse in cold water. Dip meat in breading or batter and let sit in single layer on plate for a few minutes. Place meat pieces, 1 or 2 at a time, in hot oil and cook until meat floats in indicating doneness.

Mix Rotini, 3/4 sauce mix, half the mozzarella cheese and some parmesan cheese together and spread in oblong baking dish. Lay tomato slices over top then cooked veal steak pieces or patties over them. Spread the rest of the sauce mix over top. Sprinkle parmesan and the rest of the mozzarella cheese on top and cook in a 375° oven for 30 minutes or until hot throughout and cheese is bubbly.

Awesome served with a little tossed salad and garlic bread!

Homemade Macaroni & Cheese

Stir-in ideas include but not limited to: ground beef, ground pork, sweet or hot sausage, chicken, bacon, turkey, shrimp, hotdogs, kielbasa, broccoli, chopped tomatoes, cauliflower, peas, anything you think would mix well with cheese!
  • 1 Lb Macaroni, Cooked
  • 1 Lb Extra Sharp Cheddar Cheese, Grated
  • 2 Tbs Margarine
  • 2 Tbs Flour
  • 2 Cups Milk
  • 1 Tbs Yellow Mustard
  • 1 Lb Precooked Ham, Cubed, or Ham Steak (Optional)
  • Cubed or sliced Tomatoes (Optional)
  • Broccoli (Optional)
  • 1/2 Cup Italian Style Bread Crumbs

Preheat oven to 375°. Melt margarine in 2 Qt sauce pan over medium heat, add flour stirring constantly, then add mustard (keep Stirring). Now slowly add milk. Start putting in the cheese in a little at a time, as cheese melts, put more in. Add all but 1/4 cup for topping. Stir the white sauce into the macaroni.  If you are using cubed ham, cubed tomatoes or broccoli, add it now and stir. Pour mix into oblong baking dish. If using ham steak or sliced tomatoes, place on top now. Sprinkle the rest of cheese on top, then sprinkle the bread crumbs on. Place in oven and bake until done. 

Cheesy Mac

  • 1 Lb ground Beef (Optional)
  • 1/2 bag frozen Broccoli (Optional)
  • 1 Lb Package Hotdogs, sliced (Optional)
  • 2 Boxes Macaroni & Cheese
  • 3/4 Cup Milk
  • 1/4 Cup Margarine
  • Salt and pepper to taste

Cheeseburger Mac: Brown hamburger in skillet at the same time, cook the macaroni and cheese according to package directions adding the frozen broccoli to the boiling water just after you add the macaroni. Use 1/4 - 1/2 more milk than the package directions calls for. Mix the cooked ground beef with the completed Mac & cheese and serve.

Cheesy Mac Dogs: Cook hotdogs your favorite way or simply add to the boiling water after adding the macaroni. Cook macaroni and cheese according to package directions adding the frozen broccoli to the boiling water just after you add the macaroni. Use 1/4 - 1/2 more milk than the package directions calls for. Mix the cooked sliced hotdogs with completed Mac & cheese and serve.

English Muffin Pizza's

  • 6 English Muffins
  • 1 Can Pizza Sauce
  • 4 oz Mozzarella Cheese
  • Mushrooms, sliced (Optional)
  • Onion, cut up (Optional)
  • Black Olives (Optional)
  • Green Pepper, cut up (Optional)
  • Cooked Italian Sausage (Optional)
  • Pepperoni slices (Optional)
  • Ham chunks (Optional)
  • Tomato slices (Optional)
  • Broccoli, cut small (Optional)

Split English muffins and place them on foil lined cookie sheet. Spread with pizza sauce and sprinkle cheese on top. Add any toppings you desire and bake in 400° oven for 10 minutes or until cheese is melted and bubbly. Mmmmmmmmm!

Foil Dinners

There are many ways to vary this old time camping favorite. Just make adjustments according to the taste of each person to be served. Listed ingredients list here is merely a suggested items list.
  • Meat (hamburgers, hotdogs, franks, sausage, chicken, venison, pork, etc.)
  • Unpeeled Potatoes, rinsed and sliced thin
  • Onion, sliced thin
  • Green Pepper, sliced thin
  • Fresh Mushrooms, sliced (or canned mushrooms)
  • Carrots, sliced thin
  • Salt, pepper, garlic powder, all to taste
  • Sticks of Margarine or butter

Rip off foil in large pieces (as many as people you are going to serve). First, place potatoes on foil, then put meat on side of potatoes. Next add other vegetables as desired, season to taste. Now put 3 pats of margarine on top. Fold foil over, roll it to seal it on all sides. 

Grill Method: Place foil dinners on 2nd or 3rd rack on BBQ grill (outer part of a charcoal or wood grill so not to burn) Turn every 5-10 minutes until soft inside indicating doneness. Serve hot in foil!

Oven Method: Place foil dinners on middle oven rack lined with heavy duty foil and cook at 400° for 30-40 minutes or until soft and done. Serve hot in foil!

Kielbasa and Pierogis

Kielbasa
  • Your favorite Kielbasa
  • Box frozen Pierogies

In large pot, bring water and kielbasa to a boil. Add Pierogies and cook according to package directions.

Hotdogs, Franks & Coney's

  • Your Favorite Hot Dogs
  • Hotdog Buns
  • Ketchup (Optional)
  • Mustard (Optional)
  • Relish (Optional)
  • Chili (Optional)

Hotdogs

Cook on a grill on low to medium heat, or, fry in a pan on low to medium heat, or, put in a pot of water and boil 3-5 minutes. Add any condiment that might interest you!

German Franks & Coney's

Cook these one of 2 Ways, on the grill or in a fry pan or griddle. Cook on low to medium heat until the Franks and/or Coney's split indicating doneness.
  • German Franks or Coney's
  • Peanut Oil (Optional if frying)
  • Mustard (Optional)
  • Relish (Optional)
  • Chili (Optional)

Pigs in a Blanket

  • 1 can Pillsbury crescent rolls
  • 8 hot dogs
  • 4 slices cheese
Separate crescent rolls. Place 1/2 slice cheese on each roll with 1 hot dog and roll each up. Bake according to directions on can.

Tomato Soup Rice and Hotdogs

  • 3 Cans Tomato Soup
  • 3 Cans Milk
  • 1 Box Instant Rice
  • 1Lb Package Hotdogs, sliced (Not German Franks)

Empty soup in 4 or 5 Qt sauce pan. Slowly stir in milk until smooth. Add hotdogs and put on medium high heat and stir frequently until rolling simmer. Stir in rice, cover, then remove from heat. Let stand 5 minutes with cover on, stir gently, cover again and let set another 5-10 minutes. Our Families "Halloween Dinner" and all kids ask me for this all the time!!
